Continuing December baking of cookies, I baked 2 slightly different cookies, using 1 batch of dough/sticky batter, of 1 recipe only. I called them Tweedle Dee and Tweedle Dum cookies ????
Raise your hands if you heard/knoe these names and lemme know in the comment below ????
But don’t let the names fool you though, these are sooooo good, I kid you not. I added some healthy goodies in the cookies, such as hemp hearts and chia. Not to mention they also have raisins and walnuts. Yummo!
To differentiate which is which, Tweedle Dee has thin milk frosting, while Tweedle Dum has choc chips. They are both equally delish ????
2 1/4 c enriched flour
1 1/2 tsp BP
1/2 tsp cinnamon powder
1/4 tsp ground ginger
A pinch of salt
2 tbsp hemp hearts
1/2 tbsp chia seeds
1/2 c each unsalted butter and veg shortening
8 tbsp liquid whole egg
1 c demerara style brown sugar
2 handful raisins, halved
2 handful walnut pieces, halved
1 handful semi sweet chocolate chips
Frosting
3/4 c icing sugar
1/4 c milk

Tweedle Dee and Tweedle Dum Cookies
Ingredients
- 2 1/4 c enriched flour
- 1 1/2 tsp BP
- 1/2 tsp cinnamon powder
- 1/4 tsp ground ginger
- A pinch of salt
- 2 tbsp hemp hearts
- 1/2 tbsp chia seeds
Wet Ingredients
- 1/2 c each unsalted butter and veg shortening
- 8 tbsp liquid whole egg
- 1 c demerara style brown sugar
- 2 handful raisins halved
- 2 handful walnut pieces halved
- 1 handful semi sweet chocolate chips
Filling
- 3/4 c icing sugar
- 1/4 c milk
Instructions
- Mix flour, BP, spices and salt, hemp hearts, chia seeds
- Chop roughly 1 handful walnut pieces
- Chop roughly 1 handful raisins
- Cream butter, sugar, and shortening until pale
- Cream in egg
- Add in dry ingredients into wet ingredients
- Fold in chopped raisins and walnuts
- Add in the rest of the raisins and walnuts
- Divide batter into two, add in choc chips into one
- Bake on preheated 375 F 8-10 mins
- Cool on rack
- Mix icing sugar and milk, drizzle on Tweedle Dee (the ones without choc chips)
