Today we have a birthday party to attend to, I hope it will still be a go, crossing fingers. Outside is wet atm and the party will be outdoor party 🤪
Yesterday I had to work full day and I was so wanting ice coffee but too lazy to leave work for across the road where I could get from McDonald’s 🤣 I spent my lunch break just calling my husband, but to my surprise he was actually walking behind me (yes I was walking around as I was on the phone), with ice coffee in his hand. He can be sweet like that 😁 So I had a super nice ice coffee throughout the rest of my shift 😁😍😁😍
Today’s vlog is another Mexican-food inspired. It is beef quesadillas with bbq sauce. My boys esp my oldest can have it for anytime of the day, breakfast, lunch, whenever 😁
6 lbs beef
2 tsp onion powder
2 tsp garlic powder
3 tbsp dark brown sugar
1/2 tsp mustard powder
1 tsp dijon mustard
2 tsp salt
1 tsp Smokey seasoning from Cattle Boyz
1/4 tsp ground black pepper
1/2 tsp cayenne powder
3 tsp sweet paprika powder
3 tbsp unsalted butter
2 1/4 c chicken broth
Tortilla, corn or white, up to you
BBQ sauce
Grated cheese

Shredded Beef Quesadillas with BBQ Sauce
Ingredients
- 6 lbs beef
- 2 tsp onion powder
- 2 tsp garlic powder
- 3 tbsp dark brown sugar
- 1/2 tsp mustard powder
- 1 tsp dijon mustard
- 2 tsp salt
- 1 tsp Smokey seasoning from Cattle Boyz
- 1/4 tsp ground black pepper
- 1/2 tsp cayenne powder
- 3 tsp sweet paprika powder
- 3 tbsp unsalted butter
- 2 1/4 c chicken broth
- Tortilla corn or white, up to you
- BBQ sauce
- Grated cheese
Instructions
- In a bowl, mix all seasonings to combine well, plus sugar, followed with butter
- Pour in a little broth, stir
- Coat meat with some of the spice mixture, then brown the meat on stove top
- Pour some of the broth into crockpot with a couple tbsp of the spice mixture, stir to combine
- Place meat into crockpot, flip to moistened the meat, then pour the rest of the broth and the rest of the spice mixture
- Slow cook for 6-8 H
- Shred the beef and ready to use 🙂
- Lay a tortilla on quesadilla maker, place some filling, top with BBQ sauce and grated cheese
- Top with another tortilla, brush with butter or spray with oil
- Cut with pizza cutter, serve immediately
