After a week long of heatwave, the temperature dropped for 2 days, it was breezy, but now we are back to hot days, 31 C. Feels like Indonesia, less the humidity, but thank goodness no more heatwave. Those days of 40-45 C was crazy. Thunderstorm of no rain, just thunder and lightning and strong wind, was super scary ????
This following dish tho, I have been making them since hot days started. Yep, I have been eating them almost daily because it is so refreshing for hot days, chilled in the fridge, serve as is or with warm rice, feels and tastes so good most especially during the heatwave (didn’t serve it with warm rice but chilled and as is ????).
This veggie dish is known as Urap Sayur. It is coconuty and spicy, but you can lessen the chilies or omit them in fact – if you don’t like spiciness.
1 bunch of long beans
1/2 head of large cabbage
700 g fresh spinach
1 bag bean sprouts
1 long English Cucumber (or more, or none, so optional ?)
1 bag unsweetened dessicated coconut
1 small onion
5 garlic
5-8 red bird eye chilies (1 if you don’t like spicy but still wants to get a little taste, or none is fine too)
1/2 tsp lesser galangal powder (kencur)
Salt and sugar to taste

Urap Sayur
Ingredients
- 1 bunch of long beans
- 1/2 head of large cabbage
- 700 g fresh spinach
- 1 bag bean sprouts
- 1 long English Cucumber or more, or none, so optional ?
- 1 bag unsweetened dessicated coconut
- 1 small onion
- 5 garlic
- 5-8 red bird eye chilies 1 if you don’t like spicy but still wants to get a little taste, or none is fine too
- 1/2 tsp lesser galangal powder kencur
- Salt and sugar to taste
Instructions
- Bring water to a boil, add a little salt
- Boil cabbage and long beans until tender
- Take out veggies, place into a large bowl
- With the leftover hot boiling water, blanch spinach and bean sprouts
- Take out veggies and add them into the bowl
- In a food processor, add in onion, garlic, chilies
- Pour in 1/4 c water, process into fine mixture
- Pour mixture onto a pan, add in kencur, salt and sugar to taste
- Bring to boil
- Stir in coconut, and mix to combine
- Spoon spiced coconut into veggies bowl, mix to combine
- Ready to serve
