Today is blah. Gloomy, cloudy, colder, and supposedly we will be getting wet snow if not rain ???? Yesterday was sooooo beautiful, my gosh my mood was boosted to %235, seriously. But now….meh ????
Anyhoo.
Today’s recipe is sweet rolls with cinnamon spread filling. I also added raisins and chopped pecans in the filling. So it’s cinnamon rolls, just a tad differ. Cheater way ?
1 1/2 c lukewarm water
1 tbsp sugar
1 tbsp active dry yeast
3 c strong baker’s flour
A pinch of fine sea salt
1 1/2 tbsp icing sugar
1 egg
2 tbsp unsalted butter
1/2 c cinnamon spread
2 handful raisins
100 g chopped pecans

Cinnamon Spread Rolls (Pull-Apart)
Ingredients
- 1 1/2 c lukewarm water
- 1 tbsp sugar
- 1 tbsp active dry yeast
- 3 c strong baker’s flour
- A pinch of fine sea salt
- 1 1/2 tbsp icing sugar
- 1 egg
- 2 tbsp unsalted butter
- 1/2 c cinnamon spread
- 2 handful raisins
- 100 g chopped pecans
Instructions
- Bloom yeast in sugar water
- Mix flour, salt, and icing sugar in a bowl
- Pour in yeast mixture, knead
- Knead in egg followed with butter, let rest until doubled in size
- Roll dough flat, spread with cinnamon spread
- Drop raisins and chopped pecans all over, roll into swiss roll, slice into portions
- Place rolls onto baking pan, let stand until doubled in size
- Bake on preheated 350 F for 30-40 mins depending on your oven
