Hello, hello, hello!
How’s life? I have been gardening these days, in the rain sometimes, in fact😁 I planted peonies, astilbe, and some pretty flowers that are supposedly will attract Hummingbirds too 😍 Here is crossing fingers they all will grow nicely.
Today I planted some more, but for the kitchen. Garlic, ginger, turmeric, and basil. The indoor gardening planter has chilies growing 😍
But enough about plants for now.
I baked cookies, 4 differ cookies in one day 😍 No hassle cookies, I must say as I only used 1 same recipe to make all 4.
Yep. From 1 basic recipe, you can come up with various cookies in the end. Saaaawwweeettt 😉
Here is cookie number 1, Nastar, Indonesian pineapple tart cookies.
Dough
3 1/2 c AP flour
3/4 c icing sugar
3 yolks
1 lb butter
Jam
1 pineapple
1/3 c sugar
A generous pinch of cinnamon powder
A tiny pinch of fine sea salt
Egg Wash
1 yolk

Ingredients
- 3 1/2 c AP flour
- 3/4 c icing sugar
- 3 yolks
- 1 lb butter
Pineapple
- 1 pineapple
- 1/3 c sugar
- A generous pinch of cinnamon powder
- A tiny pinch of fine sea salt
Egg Wash
- 1 yolk
Instructions
- eel and clean pineapple, then slice into portions, then process in a blender if not processor
- Pour pineapple into a pan, add in sugar and salt
- Cook by stirring occasionally yet often once it’s thickening
- You want to cook the mixture into thick jam, no liquid whatsoever
- Cool completely before using
- Cream butter, then cream in icing sugar, followed with yolks, one at a time
- Fold in flour
- Scoop dough, flatten and fill center with pineapple jam
- Shape into rounds
- Brush with yolk, bake for 10 mins, rotate pan, then bake for another 5-8 mins
- Cool on rack
