Hi Guys!
I have a nice dish to share today, from Indonesia, called nasi uduk. In Malaysia you can find similar dish, but obviously different name, which is nasi lemak.
This following rice dish is so simple to make, you just have to dump all into your rice cooker, and voila ????
I added protein and veggies in the making, so it’s more to Canada style, I guess. Not so authentic Indonesian ?
2 c rice
2 skinless, boneless chicken breast, cubed
1 lemongrass
2 Indonesian bay leaf (daun salam)
2 pandan leaf (screwpine leaf)
A pinch of galangal powder
1 – 1 1/2 tbsp vegeta powder
Salt to taste
1-2 tbsp dehydrated vegetable flakes
1/3 c sliced Chinese long beans
1 can coconut milk

Coconut Rice (Nasi Uduk Rice Cooker)
Ingredients
- 2 c rice
- 2 skinless boneless chicken breast, cubed
- 1 lemongrass
- 2 Indonesian bay leaf daun salam
- 2 pandan leaf screwpine leaf
- A pinch of galangal powder
- 1 – 1 1/2 tbsp vegeta powder
- Salt to taste
- 1-2 tbsp dehydrated vegetable flakes
- 1/3 c sliced Chinese long beans
- 1 can coconut milk
Instructions
- Rinse clean rice, place into rice cooker pot
- Add in rest of the ingredients
- Let the rice cooker do the magic!
