How’s going? It’s too chilly here today. It started to snow again yesterday. Really not fun. But at least I don’t have to go to work today. I get to cuddle my littles, having lazy morning, and I got to bake a delish banana bread too ?
I have tons of ingredients I have to use up in the kitchen, such as various oats (oat fiber, steel cut oat, oat flakes, oat this and that ?), flax seeds, skim milk powder. So I think I will come up with this and that, using those ingredients ????
This following banana bread recipe is my go to recipe whenever I make banana bread. You can omit the egg and subs it with aquafaba and ground flax, and it is good even without the skim milk powder too ?
You can bake it as muffins or loaf as well.
2 ripe large bananas
2 eggs
3 tbsp olive oil
1/4 c sugar
1 c strong baker’s flour
1/3 c skim milk powder
1/2 tbsp oat fiber
1 tsp BP
1/4 tsp BSoda
A pinch of fine sea salt
A generous big pinch of ground clove
1/2 tbsp vanilla essence
1 handful semi sweet chocolate chips
Steel cut oats, as needed
Flax seeds, as needed
Additional chocolate chips, as needed
Butter for greasing/oil spray

Oat Fiber Banana Ring Bread
Ingredients
- 2 ripe large bananas
- 2 eggs
- 3 tbsp olive oil
- 1/4 c sugar
- 1 c strong baker’s flour
- 1/3 c skim milk powder
- 1/2 tbsp oat fiber
- 1 tsp BP
- 1/4 tsp BSoda
- A pinch of fine sea salt
- A generous big pinch of ground clove
- 1/2 tbsp vanilla essence
- 1 handful semi sweet chocolate chips
- Steel cut oats as needed
- Flax seeds as needed
- Additional chocolate chips as needed
- Butter for greasing/oil spray
Instructions
- Brush your pan with butter
- Sprinkle with steel cut oats, flax seeds, choc chips
- Set aside
- In a bowl, mix flour, milk powder, sugar, oat fiber, bp, bs, clove, and salt
- In food processor, mix banana, eggs, oil, vanilla
- Mix wet and dry ingredients
- Fold in choc chips
- Pour batter into prepared pan
- Bake at preheated 350 F
