How’s everyone doing? Wishing you Happy Ramadan for those who are fasting. Life has been lovely in this part of my world. Its been sunny and warm, blue sky and all around happiness ? In fact, last night the Northern Lights were soooo strong, we could see it even when the neighborhood lights were on.
I made these cake bites last night. They are Indonesian, and are called Kue Pukis. Flavored with Mexican vanilla blend. So yummy.
200 ml thick lukewarm milk
2 tsp active dry yeast
250 g strong bakers flour
150 g sugar
A pinch of fine sea salt
A pinch of BP
2 eggs
2 tsp Mexican vanilla blend
6 tsp sunflower oil
Chocolate sprinkles

Kue Pukis
Ingredients
- 200 ml thick lukewarm milk
- 2 tsp active dry yeast
- 250 g strong bakers flour
- 150 g sugar
- A pinch of fine sea salt
- A pinch of BP
- 2 eggs
- 2 tsp Mexican vanilla blend
- 6 tsp sunflower oil
- Chocolate sprinkles
Instructions
- Mix yeast into lukewarm coconut milk, let stand until bubble
- Mix the rest of the ingredients in a bowl
- Pour in yeast mixture, let rest covered, 15 mins
- Brush pan with sunflower oil
- Cook cake for 8 mins on low-med heat
