On the weekend I baked these buttery vanilla cookies for fundraiser at work and they are almost similar to shortbread cookies, but not the traditional kind. While some would make their shortbread cookies using regular granule sugar, some others would use icing sugar, these following buttery cookies of mine used combination of both ?
They are quick to make and would work with any other flavoring of your choice. You can color your dough while prepping, or color your cookies once baked, if you like!
2 c strong baker’s flour
237 g unsalted butter
1/2 tsp fine sea salt
1/4 c sugar
1/2 c icing sugar, divided
2 tsp Mexican vanilla blend
1 tsp butter oil (flavoring)
Powder food coloring, optional

Buttery Vanilla Cookies
Ingredients
- 2 c strong baker’s flour
- 237 g unsalted butter
- 1/2 tsp fine sea salt
- 1/4 c sugar
- 1/2 c icing sugar divided
- 2 tsp Mexican vanilla blend
- 1 tsp butter oil flavoring
- Powder food coloring optional
Instructions
- Place everything (1/4 c icing sugar) into a stand up mixer bowl
- Beat to just combine
- Add in the remaining icing sugar, mix lightly with spatula
- Mold/roll and cut with cookie cutter
- Bake on preheated 350 F for 6-12 mins depending on your oven!
