How’s going? Winter is back here. Bloody cold, from +0 C, dipping to -20 C within a day. What a whiplash ? But it’s just gonna get colder, for at least throughout this week.
I have been air frying these days, and yesterday I tried making donuts. These are cinnamon pecans donuts.
And they came out perfect, so I was heaps happy. Not bad for a 1st try ?
200 ml milk
55 g unsalted butter
1/4 c sugar
1/2 tbsp active dry yeast
2 c strong baker’s flour
A pinch BP
A pinch BSoda
A generous pinch sea salt
1/4 c toasted chopped pecans, optional
Cinnamon spread
Icing sugar, sprinkles or chocolate rice, optional

Cinnamon Pecan Doughnuts
Ingredients
- 200 ml milk
- 55 g unsalted butter
- 1/4 c sugar
- 1/2 tbsp active dry yeast
- 2 c strong baker’s flour
- A pinch BP
- A pinch BSoda
- A generous pinch sea salt
- 1/4 c toasted chopped pecans optional
- Cinnamon spread
- Icing sugar sprinkles or chocolate rice, optional
Instructions
- Scald milk with butter and sugar
- Take off from heat, let cool to lukewarm
- Sprinkle in yeast, let stand for 1 minute
- Mix in 1 1/2 c flour, cover with cling wrap, let stand for 30-40 mins
- Add in 1/2 c flour with baking powder and soda plus salt
- Roll dough flat, spread with cinnamon spread and sprinkle with chopped pecans
- Shape back into a round dough, then roll flat again
- Cut with donut cutter, place donuts on air fryer basket, cover with cling wrap, let stand for 30-40 mins
- Preheat air fryer 350 F for 4 mins (with the doughnuts in the basket)
- Air fry doughnut for 5 mins at 370 F
- Brush with butter, sprinkle with chocolate rice and icing sugar
