The kids and I had a nice sky watching the other night. We saw the Northern Light, so pretty, so amazing. We ended up with tons of pictures ???? Father was working, he did see the aurora dancing as well, but our pics were superb compare to his ????
Anyhoo.
The kids harvested apples and the autumn raspberries. They finished the raspberries, while I turned the apples into apple pie filling. Storing them in the freezer, so we can always have apple pie throughout Winter ????
- 35 apples (medium-large)
- 1/2 c lemon juice
- 4-5 c sugar (my apples are a bit tart, lessen sugar if you are using sweet apples)
- 1 heaping c cornstarch
- 1 heaping tsp allspice powder (or to your liking)
- 1 heaping tsp cinnamon powder (or to your liking)
- 1/2 tsp nutmeg powder (or to your liking)
- A generous pinch coarse Kosher salt
- 7-8 c water

Freezer Apple Pie Filling
Ingredients
- 35 apples medium-large
- 1/2 c lemon juice
- 4-5 c sugar my apples are a bit tart, lessen sugar if you are using sweet apples
- 1 heaping c cornstarch
- 1 heaping tsp allspice powder or to your liking
- 1 heaping tsp cinnamon powder or to your liking
- 1/2 tsp nutmeg powder or to your liking
- A generous pinch coarse Kosher salt
- 7-8 c water
Instructions
- Pour 1/4 c lemon juice into a pot
- Peel apple and drop them into the pot
- Core apples and slice them, put them back into the pot
- Pour another 1/4 c lemon juice, toss the sliced apples
- Place the rest of the ingredients into a separate pot, mix to combine
- Pour in water, stir, bring to boil 2 minutes
- Add in apple slices
- Cook til soften and thicken, on low-medium heat
- Cool to room temperature, fill up ziplock bags
- Freeze until ready to use
