Boy do I have a treat for you, if so. The ultimate usage of a watermelon (which is so perfect for Summer but also enjoyable right through Winter). Yep, this following recipe is not just affordable but last good, half a year at least, when stored properly in the fridge, and even more months when pressured-canned.
Watermelon is an awesome fruit that is packed with vitamin C, juicy and pretty in colors. This is a fruit that you can enjoy every piece of. And did you know the sweetest watermelon is the yellow kind? ????
The flesh of watermelon is perfect for breakfast, lunch, dinner, whenever. The seeds can make great snacking. And the skin? Yep, it’s edible too, and it is what I will be focusing in sharing today.
Pickling watermelon rind
Sweet, crisp, tasty, and loaded with spices. Yummo!
Watermelon pickle is simple to make, you can enjoy it much in Summer, but also (again) through to Winter. The amount of sugar and vinegar used to pickle the rind make it last good, seriously ?
To top that, the juice of the pickle makes a delightful drink as well when chilled or served with ice cubes. My littles love it much ????
Now, this is my entry to ecoTrain and OCDB project, and although I do not have step by step pictures, I have step by step video instead, which I believe still counts.

Easy, makes plenty, and affordable ????
- 2-3 kg watermelon
- Enough water, for boiling
Lime Bath Solution
- 4 c water
- 1 tbsp lime juice
Pickling Juice
- 4 c vinegar
- 1 c water (I think I forgot to mention this in the video!)
- 5 c sugar (yep! You know it, high portions of salt, vinegar, salt, are good for many sorts of pickles)
- 1 tbsp cloves
- 3 small cinnamon sticks
- A generous pinch of cinnamon powder
- 8 whole allspice
- 1/2 tsp allspice powder
So in conclusion, from a single watermelon, you can produce smoothie from the flesh, eat the flesh as is, or freeze the flesh into frozen treats, snack on the seeds, make pickle from the skin, and not forgetting cold refreshing drink from the pickling juice, with as little budget as can be ? – and bonus, it’s on the video!

Watermelon Pickle
Ingredients
- 2-3 kg watermelon
- Enough water for boiling
- 4 c water
- 1 tbsp lime juice
- 4 c vinegar
- 1 c water I think I forgot to mention this in the video!
- 5 c sugar yep! You know it, high portions of salt, vinegar, salt, are good for many sorts of pickles
- 1 tbsp cloves
- 3 small cinnamon sticks
- A generous pinch of cinnamon powder
- 8 whole allspice
- 1/2 tsp allspice powder
Instructions
- Scoop away the watermelon flesh, reserve for making smoothie or whatever you wish. We will just be needing the rinds 🙂 Peel the green part and make sure to remove the pink part as much as you can, leaving the white part only. Rinse.
- In a bowl, mix water and lime juice, then soak the white rinds for 2-2 1/2 H, drain
- Place rinds into a pot, pour enough water to cover it, boil til soften
- Take off from heat, let rest overnight
- Drain cooked watermelon
- Place the rest of the ingredients into a pot, bring to boil for 5 mins on high
- Add in watermelon, bring back to boil
- Simmer until thickened, 2 H
- Store in jars, chilled
