What is going on with the weather, hey. Rain, rain, rain, so much rain this year ? It’s like we are hardly outside since too windy, wet, too dark, more wet ?
So for this windy and dark cloudy day, we are baking and cooking much ?
Like these apple fritters. They are freshly made ???? When I was video taping myself, my oven was busy with sourdough loaves. When I was frying these apple fritters, my stove was busy boiling soup. Fun day ????
Anyhoo.
Apple fritters!

- 2 honey crisp apples
- 1 1/4 – 1 1/2 c flour
- 1/2 c sugar
- 1 tsp cinnamon powder
- 1/4 tsp each nutmeg powder, allspice powder
- 1/2 + 1/3 c milk (whatever you have, almond, rice, cashew, dairy)
- 100 g yogurt (whatever you have, coconut, soy, dairy) – plain or vanilla
- Vanilla/maple essence, 1 tsp
- 1/4 c icing sugar
- Maple syrup
- Water
- Spices (optional)
Apple Fritters
Ingredients
- 2 honey crisp apples
- 1 1/4 – 1 1/2 c flour
- 1/2 c sugar
- a pinch of salt
- 1 tsp cinnamon powder
- 1/4 tsp each nutmeg powder allspice powder
- 1/2 + 1/3 c milk whatever you have, almond, rice, cashew, dairy
- 100 g yogurt whatever you have, coconut, soy, dairy – plain or vanilla
- Vanilla/maple essence 1 tsp
Glaze
- icing sugar
- maple syrup
- water
Instructions
- skin, core, dice apples, soak in 2-3 tbsp lemon juice, set aside
- mix flour, sugar, spices and salt in a bowl
- mix in milk, yogurt, and essence
- stir in apples
- fry til golden brown
- mix enough icing sugar with maple syrup and water to produce glaze
- coat fritters in glaze, let stand til glaze firming up
