My oldest son loves this soup big time although I hardly prepare it with complete sides as I would in Indonesia. Sheer laziness but also, Covid 19 (for today’s excuse lol) makes it hard to grocery shopping.
In Indonesia we would normally serve this soup with glass noodle PLUS rice, shredded cabbage, potato fritters, and so on.
5 chicken thighs
Water, enough for 5 servings
1 lemongrass
3 kaffir lime leaf
2 small dried galangal
A pinch of ginger powder
5-6 cloves
Spice paste:
1/2 large onion
3 candlenut
A little water
A generous pinch turmeric powder
2 generous pinch ground coriander
1 heaping tsp minced garlic
2 tbsp Vegeta/Royco powder
For serving:
Boiled eggs
Tomato slices
Hot sauce (sambal)
Sweet soy sauce (kecap manis)
Lemon juice
Boil chicken 20 mins
Add in lemongrass, galangal, lime leaf, ginger powder, cloves
Saute paste til fragrant
Pour paste into pot
Season soup with Vegeta or Royco
Boil for another 20-30 mins
Serve with rice, etc.

Soto Ayam (Indonesian Chicken Soup)
