My 1st sourdough bread, you guys 😀 Or loaf? Not my 1st trial with sourdough starter though, as my 1st was using the starter to make pretzels instead loaf of bread hahaha
SUCCEEDED, woo-hoo!
Levain:
1 tbsp sourdough starter
100 g bread flour
100 g water
Mix levain ingredients, cover with cling wrap. Let stand room temperature overnight
Bread:
Levain
1 kg bread flour
700 g water (room temperature)
Mix flour, water, and levain with wooden spoon (it will be sticky)
Cover and let stand for an H
After resting:
20 g salt
50 g water
Knead in water and salt
Cover and rest for an H
After resting 2nd time:
Folding time set (3 times per set), every 30 mins – repeat 4 times
Rest 4 H
After resting:
Divide into two
Shape to round
Rest 20 mins
After resting:
Fold, shape
Place into bowls, lined with tea towels and floured generously
Chill overnight
The next day:
Score with razor
Bake covered, preheated 450 F, 30 mins
Then bake uncovered, 20 mins
Rest then slice
