Winter is equal to tons of soups served in this house. We would have Hungarian soups, Indonesian soups, and whatever-I-have-in-the-pantry-throw-into-the-pot kinda soups 😁🤤😁🤤
Last week we had down to – 41 C (with windchill). Super cold. This week we are having extreme cold warning as well. So glad so many soups can be made so easily to warm the tummy 😊
Like this following soup. It is basing on Indonesian soup, but it is actually more to thrown-into-the-pot whatever I spotted in the pantry 😉
My picky eater boys love this soup served with warm rice and sometimes I would add boiled quail eggs too for them 😊
1 can coconut milk
1 can bamboo shoots, drain and rinse
1 can black beans, drain and rinse
1 bowl mixed veggies (carrots, broccoli, cauliflower)
Enough water
1 bag of tofu dog or any wieners/sausage of your choice
2 veggie cubes
5 garlic
1 small onion
1/2 tsp ground coriander
A generous pinch of turmeric powder
Bamboo Shoots & Black Beans Soup
Ingredients
- 1 can coconut milk
- 1 can bamboo shoots drain and rinse
- 1 can black beans drain and rinse
- 1 bowl mixed veggies carrots, broccoli, cauliflower
- Enough water
- 1 bag of tofu dog or any wieners/sausage of your choice
- 2 veggie cubes
- 5 garlic
- 1 small onion
- 1/2 tsp ground coriander
- A generous pinch of turmeric powder
Instructions
- Make paste of onion, garlic, and a little water/oil
- Boil veggies until tender, add in rinsed bamboo shoot, black beans, and tofu dog
- Pour in coconut milk, stir in paste
- Season with turmeric powder, grounds coriander, 2 vegetable bouillon cubes
