The following soup can be turned into creamy soup once you process it in an electric blender, but obviously you can serve it as is, and it would be called Lodeh, a known soup from Indonesia.
It is a nice soup for this cold, cold, Winter days, which my boys happen to like it much.
We would serve it with warm rice, while the boys would add chicken nuggets as a side.
The Indonesians would add more spices to it, but am lazy. I like easy cooking, but still delish 🤤
1 bag of mixed veggies (carrots, cauliflower, broccoli)
1/4 c red lentil
1/4 c bulgur
1 can of coconut milk
2 veggie cubes
2 tsp Vegeta powder
1 tsp mushroom powder
1 small onion
5 garlic
A generous pinch of ground coriander
Sayur Lodeh
Ingredients
- 1 bag of mixed veggies carrots, cauliflower, broccoli
- 1/4 c red lentil
- 1/4 c bulgur
- 1 can of coconut milk
- 2 veggie cubes
- 2 tsp Vegeta powder
- 1 tsp mushroom powder
- 1 small onion
- 5 garlic
- A generous pinch of ground coriander
Instructions
- Boil veggies in enough water until somewhat tender
- Add in bulgur and lentil, followed with the rest of ingredients
- Cook until bulgur is softened
