By now am sure you are used to hearing my boys shouting and yelling in the background, in most of my videos, and this one is no exception 😅🤪😅🤪

Today I have a cookie recipe to share which has the texture of scone and/or biscuit.
And also….man, are you like me, finding it not easy talking/describing, while cooking/baking? I feel like I am always losing breath 🤪🤪🤪🤪

2 c AP flour
1 tsp BP
1/2 tsp BSoda
A pinch of salt
3 tbsp of icing sugar
1/4 c vegetable oil
1/2 to 3/4 c strawberry jam
1/3 c lukewarm water
1/3 c choc chips
Strawberry Jam:
760 g strawberry
1 c sugar
1/2 tbsp lemon
a generous pinch of nutmeg and cinnamon powder
2 tbsp corn starch
3 tbps water
Wash strawberries, remove stems, place into a pot and mash with potato masher
Add in sugar, juice, cinnamon and nutmeg powder
Bring to boil to reduce (about 8-10 mins)
Dissolve cornstarch in water
Pour cornstarch to thicken strawberry, boil for another 3-5 mins
Take off from heat, let cool to room temperature before storing
Strawberry and Chocolate Chips Cookies
Ingredients
- 2 c AP flour
- 1 tsp BP
- 1/2 tsp BSoda
- A pinch of salt
- 3 tbsp of icing sugar
- 1/4 c vegetable oil
- 1/2 to 3/4 c strawberry jam
- 1/3 c lukewarm water
- 1/3 c choc chips
Jam
- 760 g strawberry
- 1 c sugar
- 1/2 tbsp lemon

- 2 tbsp corn starch

Instructions
- Mix dry
- Mix wet
- Add in choc chips
- Drop by scoop
- Bake at preheated 350 F 20-22 mins
- Cool on rack
