At the end of January I had the opportunity to make a gravity defying cake (always my favorite kind of 3D cake to make!), in the shape of a cone of ice cream.
Today I would like to share you a little process how to achieve this following cake. Which is not too hard to do when you have the materials needed 🙂
The cone itself was not edible, just the stacked of ice creams and cherries were, as well as the decorations. They were crushed walnuts, rainbow sprinkles, cherries, and chocolate sauce. This cake was pretty tall and moving the cake for delivery could be a nightmare should your cake structure is not stable. The cone was made of styrofoam.
To be able to make the styrofoam stood up – hence, gravity defying, you will have to have a structure inside. For this you can use either thick dowel or pipe (PVC), but some bakers would also use threaded rod and whatnot. You will need to drill your can board, as big as your dowel/pipe/rod. You can then secure said road/pipe/dowel either with disk and hexagonal nut, or strong glue, whichever works well for you. Whichever you use, you will have to be able to push in your styrofoam, and that the styrofoam would stay in place, not shaking, not moving, nothing. It has to be flat stable. To make it easier for the styrofoam to be pushed in, let’s say to the dowel, drill the styrofoam as well, to make a hole, then push it in. Do make sure, whatever structure you will be using, that some of it, will be sticking up, to hold the first scoop of ice cream in place.
When you are confident your “cone” is strong and stable, spread buttercream/ganache on your cone, then cover it with fondant/gum paste 😀 That was about it! Start covering your scoops of ice cream with fondant, not forgetting placing each of those ice cream cakes on their own cake boards, so when you stack them ice cream, your cakes would be intact.
