Made les macarons yesterday, green tea flavored, with bittersweet ganache filling 😀
My oldest been asking for them for weeks and finally I had a time yesterday. Unfortunately I was not listening. He asked for chocolate flavor in specific, and I made these when he was at school, thinking to surprise him when I pick him from school, aaaanddd…I came with green tea hahaha He said “Why are they green? The last time you made them were browniesh” lol, silly mommy, that is me.
But lucky the boys were not too too fussy with green tea flavor, they had some last night and earlier 😀 We will have some more on the road later as well 😀
Here is my cookie monster earlier, wanted to be photographed while eating one lol

– 1/3 c prepared aquafaba
-1/4 tsp cream of tartar
-1/2 c berry sugar
-1 tbsp green tea leaf
-Almond meal
-1/2 c icing sugar
-1/2 c evaporated coconut milk
-100 g dark choc
-100 g df choc chips
– Beat aquafaba and cream of tartar until frothy, beat in berry sugar a little at a time, until stiff
– Place green tea in a 1/2 c measuring cup, fill up with almond meal
– Sift along with icing sugar
– Fold in dry mixture into beaten aquafaba, add in green food coloring
– Pipe and let stand 2 H then bake in preheated 200 F for 30-35 mins, let stand for 15 mins
– Heat milk 1 min in microwave, stir in chocolates to melt, let stand til thicken
– Pipe ganache on cookies and sandwich them, chill a couple of H or overnight is best
