That being said, you will find various chili beans recipe on the website 😀
For the following chili, I roasted the pumpkin myself 😀
Ingredients
- 2 tbsp vegetable oil
- 5 garlic sliced
- 1 small purple onion diced
- 250 g ground beef
- 2 tsp cumin
- 1 tsp dried oregano
- 1/4 tsp cinnamon powder
- A pinch of cayenne powder
- A pinch of freshly grated nutmeg
- 2 bell peppers cubed
- 350 g roasted pumpkin cubed
- 1 small can whole mushrooms drain
- 1 can 6 blend beans drain
- 1 can corn kernels drain
- 1 tin tomato paste
- 1 tin water using tomato paste tin
- 1/4 c bbq sauce
- 900 ml beef broth
- 1/2 c packed mashed roasted pumpkin
- 1 tbsp coconut palm sugar/brown sugar
Instructions
- Heat oil, saute garlic onion
- Stir in beef, brown, add in spices
- Stir in bell pepper and the rest
- Bring to fully boil, 5 mins
- Lower temp and cook for another 20-25 mins, til thicken
I love that this chili has cubed roasted pumpkin, so that I can bite into the chunks, but if you are using canned pumpkin puree, just use 1/2 c of puree.
