I love the chocolate cake from Starbucks. Whenever my husband makes a stop in Vancouver airport, that’s the “souvenir” I always ask. Granted, this following cake isn’t anywhere close to their chocolate cake as it is banana bread, and vegan. However, when I topped it with chocolate ganache, I sliced it, and yep, I guess whatever sweets with ganache, I just love hahahha
– 1 1/2 c flour
– 1/2 c sugar
– 1/3 c cocoa powder
– 1 tsp bSoda
– a pinch of Himalayan salt
– 2 ripe bananas
– 1 1/2 tbsp lemon juice + enough nut milk to make 1 c
– 1/3 c vegetable oil
– 2 tsp vanilla essence
– Mix wet ingredients and mash in bananas
– Mix dry ingredients, then add in 2 handful walnut, crushed
– Mix wet into dry and pour into greased loaf pan
– Bake loaf on preheated 350 F convection oven for 55 mins
– Cool on rack then pour ganache on top
– You can use any kinds of chocolates for ganache, but I use 170 g bittersweet DF chocolate, soaked in 150 ml hot boiling water, mix to melt and let stand until desired thickness before pouring
