Steve comes up with another Halloween contest. This would be 2nd year in a row that I joined 😀 This time am sending in these Lava Rocks. Crossing fingers!
BUNS
– 1/2 tbsp flax soaked in 1 tbsp water, set aside
– 1/2 tbsp active dry yeast, stirred into 125 ml lukwarm DF milk with 1 tbsp sugar added, set aside to bloom
– 250 g flour mixed with 30 g icing sugar and and generous pinch of Himalayan salt, mixed in a bowl
– 2 tsp almond essence
– 80 g vegan margarine, melted
– red gel food coloring, Wilton is vegan friendly, choose the “no taste” one.
– DF chocolate chips, as needed
HOW TO
– Mix food color into melted margarine
– Pour flax meal, yeast, essence, and margarine into flour mixture, knead then let rest, covered, for 30 mins, until doubled in size. Punch down, knead a little and divide into 8 portions.
– Flatten each and place enough chocolate chips in center, seam to seal
– Let buns rise again, 30 mins.
While buns are resting, let’s make the topping!
– 2 c rice flour
– 5 tbsp sugar
– 2 1/2 tsp active dry yeast
– a generous pinch of salt
– 2 tbsp cooking oil
– 1/4 tsp almond essence
– 1 c lukewarm water (milk would require more food coloring, so water just fine!)
– black gel food coloring
Mix everything in a bowl and let rest in warm place until bubbly (15-20 minutes, by the time the buns done rising, the topping would be done as well
Now that our buns risen, our topping as well, preheat convection oven 350 F.
Spoon some topping on buns as pictured, then bake for 15-18 mins
Cool on rack slightly, serve and enjoyÂ
