Yesterday my oldest (and his father) went to visit his uncle, to borrow XBoX console as ours has the red ring of death, so boys haven’t been playing for awhile 🤣 They missed playing Portal.
But uncle has new console, he has gotten rid off his old, and with the new console we cannot use our old drive 🙁
Santa can’t come hurry enough, hey. We just said bye-bye to Winter, yeah can’t wish for Santa to come yet 😅

Before they left, I whipped up breakfast banana bread muffin to pack to uncle. Boys said they were so good, I did not get to try any but I believe them, because all gone before lunch time even, and I only packed 5 for uncle 😊
ingredients
- 4 ripe bananas, mashed with fork
- 1 tsp vanilla essence
- 1/2 tbsp vinegar
- 2 tbsp cooking oil
- 1/4 c maple syrup
- 1 1/2 c flour
- 1/2 tsp each BPowder and BSoda
- a pinch of salt
- 1/4 c Dutch cocoa powder
- 1/4 c DF chocolate chips
how to
- Preheat oven 350 F
- Mix wet ingredients
- Mix dry ingredients
- Combine and stir in chocolate chips
- Line muffin pan with paper liner and fill each with batter
- Bake for 20-24 mins (depending your oven) , until cake tester comes out clean
