Yesterday my oldest (and his father) went to visit his uncle, to borrow XBoX console as ours has the red ring of death, so boys haven’t been playing for awhile They missed playing Portal.
But uncle has new console, he has gotten rid off his old, and with the new console we cannot use our old drive
Santa can’t come hurry enough, hey. We just said bye-bye to Winter, yeah can’t wish for Santa to come yet
Anyhoo…
Before they left, I whipped up breakfast banana bread muffin to pack to uncle. Boys said they were so good, I did not get to try any but I believe them, because all gone before lunch time even, and I only packed 5 for uncle

ingredients
- 4 ripe bananas, mashed with fork
- 1 tsp vanilla essence
- 1/2 tbsp vinegar
- 2 tbsp cooking oil
- 1/4 c maple syrup
- 1 1/2 c flour
- 1/2 tsp each BPowder and BSoda
- a pinch of salt
- 1/4 c Dutch cocoa powder
- 1/4 c DF chocolate chips

how to
- Preheat oven 350 F
- Mix wet ingredients
- Mix dry ingredients
- Combine and stir in chocolate chips
- Line muffin pan with paper liner and fill each with batter
- Bake for 20-24 mins (depending your oven) , until cake tester comes out clean
