My sicky 8 yo doesn’t have much appetite. He asked for fried noodle, indomie, I made and after a spoon he didn’t want it. He then asked for PB & jam sandwich, after a bite he gagged. Mandarin, his favorite, nope, tofu dessert, no. He’d like cold chocolate milk, he said, and we had none ?
So I quickly made steamed buns for lunch. He ate one, and my buns are fat, so am happy, at least he eats something for energy.
In my head, I wanted to make hamster-like buns, but my buns rose nicely and fluffy they became fat guinea pigs instead ????
I juiced beet, kale, carrot and celery this morning and I used the pulp for these steamed buns filling.
Filling
- 2 shallots, thinly sliced
- 3 garlic, thinly sliced
- 2 tbsp olive oil
- 1 tbsp hemp seeds
- 1/3 c x 2 of TVP, mixed with 1 tbsp dehydrated veggies, soften in enough hot water to bloom
- 1/3 c packed juice pulp
How To
- Place everything on nonstick pan and cook til soften, on medium heat, adding low sodium soy sauce, sesame oil, freshly cracked black pepper, and Vegeta powder, to taste.
- Stir in a little dried basil and tarragon
- Cool to room temperature
While filling is cooling, let’s make the buns!
Buns
- 1 1/4 c unsweetened almond milk
- 2 tbsp sugar
- 1 tsp active dry yeast
- 3 c flour
- 1 tsp Vegeta powder/seasoning powder/salt
How To
- In a bowl, heat milk to lukewarm, 45 seconds in microwave
- Stir in sugar and yeast, let stand to bloom, 5 mins
- Mix flour and Vegeta powder in another bowl
- Once yeast bloomed, pour into flour mixture, knead
- Cover with cling wrap, let stand in warm area for 20 mins
- Punch down dough, divide @45 g each (it will make 8 buns)
- Flatten and fill with 2 tbsp of filling, seam to seal
- With scissor, cut a tail and eyes
- On the eyes area, brush with a little water and stick two black chia seed (for eyes)
- Let stand buns to rise again, for 20 mins
- Steam on preheated steamer for 10 mins
Voila ? The fat guinea pigs are ready ????
