How’s your Sunday so far? My house is having a lazy Sunday today, like seriously lazy, or super relaaaaaax Sunday. Boys were building Lego throughout morning then they danced to Just Dance on Play Station, and as am typing, it’s not even 5 PM but I am kind of at a lost of what to do for the rest of this afternoon ????
So, time to share my dish, I guess
This morning I mentioned how my husband bought tons of leeks yesterday, and they weren’t the slim type, the ones he got were rather huge, so last night I turned them into soup, creamed soup to be exact. It was just a simple soup but my 8 yo really liked it.
We served the creamed soup with rice paper bacon and it was soooo good if I may say so myself.
For serving, you can sprinkle the soup with some nutritional yeast, if you like, if not, serve as is.
Ingredients
- 3 large leeks, discard the top green part and the roots, thinly sliced
- 3 large celeries, thinly sliced
- 4 large potatoes, cut into small cubes
- 2 tbsp olive oil
- freshly cracked black pepper
- Vegeta powder seasoning to taste
- 2 tsp garlic powder
- 1 box mushroom broth
- 2 c water
How To
I used Instant Pot but you can use stovetop
- Heat oil, saute leeks and celery slices until soften
- Stir in cubed potatoes, garlic powder, Vegeta and black pepper
- Pour in broth and water, cover the lid, cancel saute and select soup, adding 5 more mins to the timer
- Once soup is ready, with immersion blender, puree soup and pour into serving bowl
Serve soup with crushed rice paper bacon and nutritional yeast
