Continuing the celebration of Aussie Day, which happens to be my birthday ? too, I treated myself with 300 Steem ? Yep, I powered up. Saaaweeettt.
For these celebrations as well, yesterday I shared you a veganized (chocolate) Lamingtons recipe – I don’t feel like preparing a big cake, but I’d love to make various of lamingtons, and since Aussie Day (plus birthday) is coming up, I will be sharing lamingtons recipes in coming days, starting yesterday ?.

Today I am sharing another version of veganized lamingtons and this time it’s Double-Berry Lamingtons
I wanted to make pinkish lamington without using food color and I couldn’t find dried strawberry/ strawberry powder but dried goji, so it’s double-berry in the end, and not pinkish, ah well.
They taste quite wonderful tho. I may or may not have stuffed my face with two lamingtons at once, forever fat vegan here ?
Sponge Cake
- 1 1/2 c flour
- 1/2 c sugar
- 1 tsp BSoda
- a pinch of salt
- 1 c water
- 1 tsp vinegar
- 5 tbsp vegetable oil
- 1 tsp vanilla essence
- 1/4 tsp strawberry oil (optional)
How To
- Preheat oven to 350 F
- Mix dry ingredients in a bowl, pour in wet ingredients, mix to combine
- Pour batter into parchment paper lined square pan and bake for 25 minutes
- Cool on rack, slice into squares
Dipping
- 5 tbsp strawberry jam
- 2-3 tbsp hot boiling water
How To
- Mix to combine
Coating
- Dried goji berry, as needed
- Desiccated coconut (sweetened or unsweetened as you wish)
How To
- Process goji berry into powder and mix with coconut. If you’d like to, drizzle a tbsp of dipping liquid into coconut and mix.
Lamingtons
- Dip cakes into dipping and roll in coconut
Let cakes rest for an H before serving (room temperature or chilled).
