Commemorating the coming Australia Day which happens to be my birthday as well, I am sharing lamingtons recipe, the vegan version obviously.
I baked my first lamingtons when I was 16, wait… 17 maybe, can’t remember well, am old ? for a school baked sale. I sold out ? That was also the last time I ate lamingtons (in Australia), believe it or not. My mum, she baked tons of goodies, but mostly mint slice, caramel slice and such. So yeah, I didn’t have lamingtons for years.
Fast forward to 2005, I visited my husband’s family in Europe, and his late grandmother baked me kokusz kocka…aaand ta-daaaaa. It was lamingtons!
How and what now????
Kokuszkocka literally means coconut squares.
They were totally lamingtons, and grandmother said kokuszkocka is one of Hungarian specialty.
Say whaaaat…???!!

Lamingtons is Australian and kokuszkocka is Hungarian, but both are exactly the same.
Confusing?

Sponge Cake
Ingredients
- 1 1/2 c flour
- 3/4 c sugar
- 1 tsp BSoda
- a pinch of salt
- 5 tbsp vegetable oil
- 1 tsp vinegar
- 1 1/2 tsp vanilla extract
- 1 c water
How To
- Preheat oven to 350 F
- Line a square pan with parchment paper
- Mix dry ingredients in a bowl, make a well in center and pour in dry ingredients, mix with wooden spoon
- Pour batter into prepared pan and bake for 25 minutes
- Cool on rack
Dipping
- 1/4 c + 2 tbsp icing sugar
- 2 tbsp cocoa powder
- 1 tbsp vegan margarine
- 1/4 c hot boiling water
- Mix everything
Coating
- Desiccated coconut (sweetened/unsweetened as you wish)
Lamingtons
- Slice cake into squares, dip in cocoa mixture, then roll in coconut
- Serve chilled (which is best in my opinion)

Ingredients
