My husband been asking for apple pie for a week, but I’ve been lazy 😌 Today I finally baked him apple pie and I can hear all the boys enjoying their plates as am typing this 😊
This pie is basing on Hungarian pan pie called almas pite. I have shared a couple of veganized recipes, and now here is another version. I seem to always change recipes, I know, it’s due to me not really “using” recipe, am I making you confused yet? 😂 You know, like when you already know how to make mashed potato, so you don’t have exact recipe but you know the ingredients, yeah like that 😂
Anyhoo, let’s see how I made this apple pan pie/cake (the crust isn’t like North American pie, but pite is translated to pie. I’d say it’s more to a little cakey/bread crust)
Dough
- 100 ml cashew milk
- 1/2 tbsp sugar
- 1/2 tbsp active dry yeast
- 3 tbsp flax meal
- 6 tbsp water
- 1 tbsp chia seeds
- 3 c flour
- 6 tbsp sugar
- 200 g vegan margarine
Filling
- 12 green apples
- 1/2 c sugar
- 1/2 tbsp cinnamon powder
- 1 generous pinch freshly grated nutmeg
- 1 tbsp lemon juice
How To
Filling
- Skin, core and grate apples
- Mix sugar, cinnamon and nutmeg, stir in apple and lemon juice, set aside and start working on the dough
Dough
- In a bowl, mix flax and chia, stir in water, set aside
- In a separate bowl, heat milk to lukewarm (30 seconds – microwave). Stir in sugar, then yeast. Let stand until bubbly, 5 mins
- In a separate bowl, mix flour and sugar, make a well in center. Pour flax mixture and yeast mixture, stir with wooden spoon
- Knead in 140 g margarine, then knead another 60 g
- Divide dough into two equal weight, roll each

- Place one skin on rectangle pan, spread filling (reserve apple water), top with another skin
- Poke holes and brush skin with apple water, bake on preheated 350 F for 45 mins
