Our breakfast last week
My oldest was at home as he had long weekend So we prepared what was going to be pancake, into waffle, as my youngest demanded us to use the *Elmo* waffle maker
I called it superfood as this vegan pancake/waffle has *purple yam powder, chia seeds, and ground flax seeds*
My babes hardly like waffle/pancake with syrup unless we were at a hotel  So we served our thick waffle as is.
Ingredients
– 2 c flour
– 1/4 c sugar
– 2 tbsp ube powder (some brands have dairy, find the one without)
– 1 scant tbsp BP
– 2 tbsp chocolate sprinkles, made of real chocolate (known as hageslag as well, brand we used is called Ceres Classic, the other chocolate sprinkles by Ceres use dairy but the Classic one)
– 1 1/4 c coconut nog
– flax egg
– chia egg
How To
– stir 1 tbsp ground flax in 3 tbsp water, let stand until slimey (2-3 mins)
– stir 1 tbsp chia seeds in 4 tbsp water, let stand until bloomed (5 mins)
– mix flour, sugar, ube powder, BP and salt in a bowl
– pour in flax egg, chia egg, and 1/4 c coconut nog, stir, then add the rest of the coconut nog
– let rest dough for 3-5 mins, while preheating the waffle maker
– pour a small paddle of batter, and cook for 3-5 mins, according to your waffle maker (of course you can cook the batter as pancake on a flat pan/pancake griddle/iron cast/Teflon)
