Oh Lookie Lookie, The Capsicums Have Gone Spooky – Vitamin C, Anyone?
Bell peppers! We looooveee them so much; as healthy munch, in salad, in stir fry, in sandwich, in fried rice, barbecued, in many dishes. Yum!
They are sweet, they are pretty colorful, and they are a great source of vitamin C. I did not know this, but living in Hungary I learned how Hungarians are pretty much crazy on bell peppers, and they would always say ‘here, have a bell pepper, it’s vitamin C, you know’.
How awesome is that, right?
So now Imma share you this easy yet tasty Hungarian dish that is super packed with vitamins, called lecso
But before that, check out these vamped up sliced Capsicums 😂😂😂 I know, am so silly. I sliced them and realized they were like faces screaming and looking shocked. So what did do? I grabbed my crafty box and took out googly eyes and added them to the Capsicums 😂😂😂😂

Anyhoo, let’s get cooking!
- 8 bags of fresh bell peppers @3 bell peppers per bag, halved and deseeded. Wash clean and thinly sliced
- 1 medium size onion, diced
- 3 cloves of garlic, diced
- 1-2 tbsp olive oil
- 1 bag meatless sausage/wieners (storebought or homemade), sliced
- 1 big can if crushed tomatoes (798 ml)
- Heat oil and saute onion and garlic until fragrant
- Stir in sliced bell peppers and pour in 1 c water, cover with lid, cook for 15 mins
- Stir again and cover with lid, cook until bell peppers are super soft and water somewhat evaporates.
- Pour in crushed tomatoes, stir, add in sliced sausage, seasn, cover with lid and cook for another 10 mins
- Serve warm with sourdough bread, yum!
