I wasn’t gonna enter this time, as zucchini season is already over where I live, no fresh zucchini around, not in my garden as we already harvested all ours, not at the 4 grocery stores in town. But I do have frozen grated zucchini in the freezer and am a good sport 😂😂😂😂 So here is my entry for this week’s Steemit Iron-Chef, with zucchini as the main ingredient.
A mock apple cobbler for two 😉
Filling
370 g frozen grated/chopped zucchini
3 tbsp lime juice
2 tbsp 100% apple juice, not from concentrate
1/3 c sugar
1/2 tsp cinnamon powder
1/4 allspice powder
Bring everything to boil for 10-15 minutes
Crust
1 c flour
2 tsp sugar
5 tbsp vegan margarine
1/3 tsp allspice powder
Mix everything into crumbles texture
To make cobbler
Mix filling with 1-2 tbsp crust, set aside
Pat some crust on the inside of your pie plate/bowl (as long as heat proof), ramekin
Pour filling then top with more crust crumbles
Sprinkle with cinnamon powder
Bake for 35-40 minutes on preheated 375 F
