This Hungarian zucchini stew is made using our harvested zucchini from the backyard 😀 Simple to make and just hearty. Granted my husband’s late grandmother would slice or grate the zucchini thinner and longer, but I got tired somehow and would just sliced some of them 😛

For 6 servings
1 large zucchini (you can skin it or not), grate/chop/diced
1 large onion
6 garlic
1 tbsp olive oil
1 small plate fresh/frozen dill, chopped (makes 4 heaping tbsp)
Vegeta powder to taste
Water as needed
Heat oil saute garlic and onion, followed with dill
Stir in washed grated zucchini, cook til soften, adding water a little at a time, as needed.
This will take at least 30-45 minutes
To finish
1 c water
3 tbsp flour
1 heaping tbsp chopped dill
1/2 tsp smoked paprika powder
Once soften, mix flour into water and pour into the pot, to thicken
Adjust taste, then add in more dill
Stir in paprika powder
To serve
Vegan sour cream (optional)
Toast (optional)
Breaded vegan chicken (Gardein, optional)
