Because back to school has started, I will most likely post muffin recipes quite often as they are either for my son’s breakfast, recess snack, and/or afterschool snack 😉
I had 3 super ripe bananas that I didn’t feel like freezing (to make nice cream) so I just used them up.

1 c flour
1/4 c sugar
1 tsp BP
1/4 tsp BSoda
1/4 tsp ube powder
Mix in a bowl
Process until smooth
3 super ripe bananas
1/2 of a peach (canned peaches, halved)
2 tbsp of peach juice from the can
Pour mixture into dry
Add 2 envelopes of dr.oetker regular (no flavor) quick cooking oatmeal
Mix to combine
Pour 3 tbsp batter into prepared muffin pan
Top each muffin with one vegan chocolate chip

Bake in preheated 350 F for 25-30 mins
Cool on rack and enjoy 😉
Banana Oatmeal Muffins
Ingredients
- 1 c flour

- 2 tbsp of peach juice from the can
- 2 envelopes of dr.oetker regular
- vegan chocolate chip
Instructions
- Mix dry ingredients in a bowl
- Process until smooth banana, peach, and juice
- Add 2 envelopes of dr.oetker regular (no flavor) quick cooking oatmeal
- Mix to combine
- Pour 3 tbsp batter into prepared muffin pan
- Top each muffin with one vegan chocolate chip
- Bake in preheated 350 F for 25-30 mins
- Cool on rack and enjoy 😉
