When I read the theme, I already knew what I wanted to make! Stuffed tomato and tomato drink. Bought the tomatoes the other day but only today I could finally get to it, as I had to chat with my oldest sister first last night ๐๐๐ And yes, you guessed it right! She had to teach me first ๐๐๐
You see when I was much younger, like more than 35 years ago, growing up, my oldest sister loved to make us tomato drink. I used to hate tomatoes, but I loved her tomato drink. But for the life of me, as I am old now (lol), I do not remember how she made it, so I had to ask her over the chat last night.
Turns out it’s super simple!
And since the other day I made chorizo (crumbled sausage), I thought of making the stuffed tomato with it.
So here is my entry for the 1st contest, Quickie Tomato Crownz with Tomato Ice Drink.
For the Crownz, serving at least 6 (2 Crownz per person) -quickie because am a lazy mother, I prepared it with microwave ๐
1/4 c each white quinoa and couscous
2 tbsp burghul
3-4 c water
2 tbsp vegan margarine
1 tbsp nooch (nutritional yeast)
1 tsp Vegeta powder (or vegan bouillon powder, or just salt)
1 c chorizo, either storebought or homemade
Place couscous, quinoa, burghul in a bowl, rinse
Add in water
Cover bowl with cling wrap, poke holes, and microwave for 8-10 minutes, stirring once half way
Let stand for 5 minutes
Stir in margarine, nooch and season with Vegeta
Mix in chorizo
Wash tomatoes and slice into 8 slices, slicing from top to halfway down, without cutting through.
Open these slices carefully and fill the center with chorizo mixture
Tomato Ice Drink (serving one)
1/2 tbsp basil seeds (may look like poppy seeds or black sesame seeds or even chia seeds, but they are definitely not the same – available at Asian stores or online)
3-4 tbsp water
2 tbsp sugar dissolved in 1 c cold water
1 medium size tomato, washed
Crushed ice/ice cubes
Bloom basil seeds in water. This will only take a minute (unlike chia seeds, overnight)
Slice tomato into two, crush one slice and cube/dice the other half
Spoon crushed tomato into serving glass, stir in enough bloomed basil seeds, then pour in sugar water . Add in cubed tomatoes.
Drop in crushed ice and serve
