As I mentioned in my two previous recipe-blogs of how crazy my husband is when it comes to sweet cherries season, I always end up baking cherry loaves whenever we he comes home with dark cherries ?
This following cherry loaf is based on Hungarian Cherry bread (will include the recipe below!), but of course veganized! ?
This time I added nut-meals in the filling, that is why am calling it Nutty Cherry Loaf ?
Bread
1 c sweetened fortified soy milk, heat in microwave for 1 minute
Stir in 1 tbsp vegan margarine to melt
Stir in 1 tbsp sugar
Sprinkle 1/2 tbsp active dry yeast
Let stand 5 mins to bloom
In a bowl, mix:
3 c flour
1 envelope vanilla sugar
2 tbsp sugar
Pour in yeast mixture and knead
Let rest covered for 30 mins
Meanwhile, prepare filling:
2 c fresh dark cherries, pitted
2 tbsp sugar
1/4 c sour cherry juice
Bring to boil, stirring often, cook for 8 minutes
Stir in 1 tbsp mixed nuts meal (I had left over from making biscuits the other day – mine was a mixture of PB2 and cashew, pecan, hazelnut, almond, walnut), and cook for another 2 mins
Take off from heat, set aside
Remove pits from 1 c fresh dark cherries, slice
Melt 1 tbsp vegan margarine
Roll dough to rectangle and brush with melted margarine. Sprinkle with 2 tbsp icing sugar and 2 tbsp mixed nuts meal all over.
Spread cooked cherries and fresh cherry slices all over. Roll and shape dough to loaf. Let rest for 45 mins
Preheat oven to 350 F
Brush loaf with aquafaba solution of 1 tbsp brown sugar and 1 tbsp red kidney beans aquafaba
Bake loaf for 35 mins
Cool on rack, slice and enjoy (slightly warm is aweeesssooommmeee!)
My husband likes it sprinkled with icing sugar as shown on the very first picture ?
