What the H is a pound cake?
Pound Cake is the ultimate food, haven’t you heard? It’s great for every time, every season, every occasion, and a slice is a must for every day, if I was the President ?.
Traditionally baked in a tube pan, as the name is pound cake, it really uses a pound each of the ingredients, so bakers go by the ratio of 1:1:1:1
- 1 pound of flour
- 1 pound of butter
- 1 pound of eggs
- 1 pound of sugar
Obviously since the ingredients are plenty, they make a big cake that could feed plenty. It is so rich, a slice would gain you a pound of weight ?
Today’s pound cakes are mostly baked in loaf pan (and people would half the ingredients of their recipe) , just like this following cake of mine, lemon pound cake with delish banana icing on the top.

It is a vegan pound loaf cake and no, I did not use a pound of egg substitutes, too expensive yo! – and no, you cannot subs 9 eggs with 27 tbsp AF, you will get pudding instead a cake ?
Cake
- 1 1/2 c flour
- 3/4 c sugar
- 3 tsp baking powder
- a pinch of salt
- 1 tbsp lemon juice
- grated of lemon peel
- 100 ml vegetable oil
- 170 ml water
- 1/2 tsp vanilla essence
How To
- Preheat oven to 375 F
- Grease a loaf pan and line with parchment paper, set aside
- In a bowl, mix flour, sugar, salt, lemon peel, and baking powder

- Make a well in the center and pour in oil, water, essence and juice, mix to combine
- Pour batter into prepared loaf pan and bake for 35-45 minutes or until a knife inserted in center comes out clean, cool cake on cookie rack

Banana Icing
- 2 large bananas
- 1/2 c icing sugar
- 1 1/2 tsp lemon juice
- 1/2 tsp vanilla essence

How To
- In a heatproof bowl, mash bananas
- Stir in the rest of ingredients
- Using double boiler method, beat icing for 7 mins

- Cool to room temperature
- Spread icing on cake
…and oh, don’t use serrated knife, my first slice was sad ?
Lemon Loaf
Ingredients
