These cookies are a bit crunchy on the outer part but soft in the middle. They remind me of store bought cookies texture though. The boys (including the father) like them much 😉
125 g shortening
1/2 c each sugar and brown sugar (lightly packed)
1/2 tsp vanilla essence
1 flax egg (1 tbsp ground flax soaked in 3 tbsp water, let stand for 8-10 mins)
3/4 c x 2 flour
2 tsp BP
1/2 tsp salt
1 tbsp aquafaba
3/4 c vegan chocolate chips
Cream shortening, sugars, vanilla. Beat in flax egg
Mix in sifted flour, BP and salt
Beat in 1 tbsp aquafaba
Stir in Choc chips
Preheat oven 350
Shape dough by tbsp, place on parchment lined sheet, flatten a bit
Bake for 10-12 mins
Cool on rack
