This is how I get to trick my 3 yo with veggies and healthy ingredients…often through muffins ?…and/or smoothies!
1 large ripe banana, mash in a bowl
Add in 1/4 c sugar, 3 tbsp aquafaba, 1 tsp ground flax seeds, 1 tsp chia seeds, 1/2 tsp almond essence (optional), and 2 tbsp oil. Stir to combine and let stand for 5 mins
Meanwhile, microwave 1 frozen spinach nuggets to soften
In a bowl, combine 1/2 c flour, 1/2 tsp BP, 1/4 tsp BSoda, a pinch of salt, 1-2 tbsp cocoa powder
Pour in wet and stir to just combined
Add in 1/8 c chocolate chips and spinach, stir a bit
Fill 6 cupcake wrappers (2 tbsp each of batter)
Sprinkle with 1/8 c Choc cips
Bake for 25 mins in preheated 350 F
Cool on rack and enjoy ?
Double Chocolate Spinach Muffins
Ingredients
- 1 large ripe banana
- 1/4 c sugar
- 3 tbsp aquafaba
- 1 tsp ground flax seeds
- 1 tsp chia seeds
- 1/2 tsp almond essence
- 1 frozen spinach nuggets
- 1/2 c flour 1/2 tsp BP, 1/4 tsp BSoda, a pinch of salt, 1-2 tbsp cocoa powder
Instructions
- Mash banana in a bowl, set aside
- Stir sugar, aquafaba, flax seeds, chia seeds, essence, and oil to combine in another bowl, let stand 5 mins
- Microwave frozen spinach to soften
- In a bowl, combine flour, BP, BSoda, salt, cocoa powder
- Pour in wet into dry and stir to just combined
- Add in 1/8 c chocolate chips and spinach, stir a bit
- Fill 6 cupcake wrappers (2 tbsp each of batter)
- Sprinkle with 1/8 c Choc cips
- Bake for 25 mins in preheated 350 F
