You don’t need nothing else. That’s what my husband said. I prepared curried soy curls for dinner and he asked me to pack some for lunch at work the next day and when I asked him anything else I should add to the lunchbox, he said nothing else :D:D:D
This is definitely his favorite 😀

1 1/2 c frozen spinach nuggets
2 c soy curls, soak in hot water for 5 mins
2 each of star anise, black cardamom, green cardamom, dry fry (toast) then grind to powder
1 1/2 tsp coriander ground
1 tsp cumin ground
1/2 tsp mustard ground
1/4 tsp turmeric powder
1/4 tsp cayenne powder
3 garlic
1/2 of an onion
1-2 tbsp olive oil
Vegeta powder to taste
1 can coconut milk
Make paste from garlic and onion
Heat oil, saute paste and spices until fragrant
Stir in drained soycurls and cook for 2-3 mins
Pour in coconut milk followed with quickly rinsed spinach nuggets , stir
Cover and cook on medium heat until spinach softened
Season with Vegeta
