Baking soda challenge??? I am in!

If you are looking banana bread that is more to bread in texture instead tea-cake or quick bread, give my banana cherry bread a try! It is so good and toast-able! My two little sons love it big time 🙂
This bread is using buttermilk, and as this is a vegan bread, I have not seen commercial vegan buttermilk yet, but it is do-able to make yourself.
As easy as to make dairy buttermilk, obviously!
In a bowl, make buttermilk out of:
1/3 c almond milk mixed with 2 tbsp lemon juice
Now let’s prepare some dry and wet ingredients before we start baking 🙂
Mix dry ingredients in another bowl:
2 c flour
2 tbsp flour
3/4 tsp each BP and BSoda
A pinch of salt
Now for wet ingredients:
In a separate bowl, mash and mix 3 large ripe banana with 1/4 c maple syrup
Pour in buttermilk and mix well
Now that you got your buttermilk, dry and wet ingredients, we are good to go 😀
Pour wet mixture into dry ingredients and stir to just combined
Stir in about 20 defrosted frozen sweet dark black cherries
Bake in preheated 350 F for an H
Cool on rack (please make sure it’s totally cooled to room temperature before wrapping the bread).

Ingredients
