Happy Weekend and hope yours is as sunny as ours. It’s only 9 AM and it’s freaking hot already. Summer is back, yay!
For now, a quicky recipe for a low carb meal 🙂
In Indonesia we have this stir-fry egg noodle with a little gravy in it and it is known as “mie kuah”. My husband likes getting Shirataki noodle (made either of konjac yam or tofu, they are zero carb) and I would turn them into mie kuah 😀
Here is the recipe if you’d like to try. If you are not familiar with Shirataki noodle, let me inform you one crucial thing. You need to season the hell out of it so it would be tasty hahahah
- 2 bags of shirataki noodle, drain, rinse, drain
- 1 garlic, sliced
- 1/4 of a small onion, sliced
- 1/2 box of white button mushrooms, skinned, sliced
- 1/2 of a red bell pepper, sliced
- 2 handful of fresh spinach
- 1 bird eye chili, sliced
- 1/2 tbsp kecap manis
- 3-4 drops Maggi liquid seasoning (or to taste)
- 1/2 tbsp PB2 (peanut butter powder)
How To
- Heat oil
- Saute garlic onion
- Stir in veggies, then noodle
- Season
- Stir in sliced chili

Mie Kuah
Ingredients
