Yesterday I made pastry filled with these potato, delish. Will share the recipe too. Besides for the pastry, we also consumed them with warm rice, soooo simple yet yummy
3 medium red potato, skinned, cubed to bitesize, boiled for 10–12 mins, drain
1/2 of an onion, sliced
2 garlic, slices
2 bell pepper (colorful ones), diced
1/2 c TVP, soften in hot water for a minute
1 can black beans, drain
1 tbsp Vegeta powder
2 tsp each ground cumin, coriander and smoked paprika powder
1/2-1 tbsp lemon juice
Heat oil, saute onion garlic to soften
Stir in bell peppers, cook for 2-3 mins
Add in the rest and season
Stir well
Adjust flavor
As this is for my kids too, I didn’t add cayenne nor black pepper but those would be wonderful to add as well!
Black Beans and Potatoes
Ingredients

- 1/2 c TVP soften in hot water for a minute
- 1 can black beans drain
- 1 tbsp Vegeta powder
- 2 tsp each ground cumin coriander and smoked paprika powder
- 1/2-1 tbsp lemon juice
Instructions
- Heat oil, saute onion garlic to soften
- Stir in bell peppers, cook for 2-3 mins
- Add in the rest and season
- Stir well
- Adjust flavor
