Summer has been cold these days, so warming the house with the oven on is good as an excuse to bake, bake and bake
Well actually am just entertaining myself. Fall is about to come here
1 large carrot, process in a blender
1 frozen spinach nugget, thaw
30 g frozen rhubarb, give a quick rinse
1/4 c non dairy Choc chips
1 banana, mashed
1 tbsp flax ground
3 tbsp black bean aquafaba
1 c flour
2 tbsp oil
1/4 c sugar
1/2 tsp BP
1/4 tsp BSoda

In a bowl, mix mashed banana, sugar, aquafaba, flaxseed, and oil
Add in flour, BP, BSoda, stir a bit
Add in carrot, spinach, rhubarb and choc chips
Preheat oven 350 f
Bake for 25 mins
Cool on rack

Ingredients
