Summer has been cold these days, so warming the house with the oven on is good as an excuse to bake, bake and bake 😝
Well actually am just entertaining myself. Fall is about to come here 😅
1 large carrot, process in a blender
1 frozen spinach nugget, thaw
30 g frozen rhubarb, give a quick rinse
1/4 c non dairy Choc chips
1 banana, mashed
1 tbsp flax ground
3 tbsp black bean aquafaba
1 c flour
2 tbsp oil
1/4 c sugar
1/2 tsp BP
1/4 tsp BSoda
In a bowl, mix mashed banana, sugar, aquafaba, flaxseed, and oil
Add in flour, BP, BSoda, stir a bit
Add in carrot, spinach, rhubarb and choc chips
Preheat oven 350 f
Bake for 25 mins
Cool on rack
