Who would have thought adding soycurls to stir fry bittergourd would be as good as adding shrimps 😀
4 bitter gourd, seeded, thinly sliced
2-3 tbsp salt
Using hands, squeeze gourd that is already sprinkled with salt. Let stand for a couple of hours, rinse
1 tbsp olive oil
1/2 of a medium onion, thinly sliced
2 garlic thinly sliced
2 bird eye chilies, thinly sliced
Maggi liquid seasoning, to taste
1 1/2 c soy curls, soften in hot water for 5 mins, drain
Heat oil saute onion garlic and chilies
Stir in bitter gourd, cook covered for 5 mins
Stir in soy curls and season
Cook for another 5-10 mins
Serve with warm rice
