1 large ripe banana, mash in a bowl
Add in 1/4 c sugar, 3 tbsp aquafaba, 1/2 tbsp ground flax seeds, and 2 tbsp oil. Stir to combine and let stand for 5 mins
Add in 1/2 c flour, 1/2 tsp BP, 1/4 tsp BSoda, a pinch of salt, 1/2 tbsp soy milk powder, 1/4 tsp each allspice and cinnamon powder. Stir to just combined
Add in 2 tbsp chocolate chips, 1 tbsp dried blueberries, and 1 tbsp steel cut oats. Stir a bit
Sprinkle with 1 tbsp steel cut oats
Preheat oven 350 F
Line a muffin/cupcake pan with cupcake wrappers
Spoon 2 heaping tbsp to each wrapper (this makes 6)
Bake for 25 mins
Cool on rack
Didn’t last long, only about 3-5 mins cooling, kids ate them. They were so impatient as the muffins smell so good they said
Chocolate Bluenana Muffins
Ingredients
- 1 large ripe banana mash in a bowl

- 1 tbsp dried blueberries
- 1 tbsp steel cut oats
- 1 tbsp steel cut oats
Instructions
- Mix banana with the next 4 ingredients
- Add in flour, BP, BS, salt, spices, and soy milk powder
- Stir to just combine
- Add in chips, blueberries, oats, stir a little
- Sprinkle with the last oats, but dont stir
- Preheat oven 350 F
- Line a muffin/cupcake pan with cupcake wrappers
- Spoon 2 heaping tbsp to each wrapper (this makes 6)
- Bake for 25 mins
- Cool on rack
