I posted these eggs on a vegan group the other day and someone commented that eggs aren’t vegan. That comment made me happy as it means these eggs look realistic enough to be pass on as chicken eggs
Although they do look like the real eggs, i am not too satisfied with the flavor still. Still need to tweak the recipe. This was my second try.
Original recipe using almond milk and hers produced egg white that is WHITE. My first and second try, I used differ brands of almond milk and neither were white, white! Made me skeptic of her milk
The original recipe’s yolk also bitter IMO, as hers are using chickpeas flour, so I made my second try (the ones on the pic) with white bean and without chickpea flour.
Original recipe’s yolk also very bright yellow, mine weren’t, so I upped the turmeric and I didn’t quite like the tad strong flavor!
So here I am sharing the recipe, but yes for the future, I will tweak recipe and upload my new trial(s)
My 7 yo didn’t complain at all, as the eggy smell and shape is there, but my husband said, we need to figure out for better flavor, which I agree!
1 1/2 c unsweetened almond flour
2 tsp agar-agar powder
A pinch or two salt
Bring to boil and pour into mold, let firm in the fridge
White beans (from can, drained)
Black salt (kalanamak)
A pinch of salt
Turmeric
Blender everything
Scoop cavities on egg white and spoon yolk (shape a little into rounds) into cavities
(Original recipe for the yolk using: chickpea, chickpea flour, salt, turmeric, oil)

Ingredients
Egg White
- 1 1/2 c unsweetened almond flour
- 2 tsp agar-agar powder
- A pinch or two salt
Egg Yolk
- White beans from can, drained
- Black salt kalanamak
- A pinch of salt
- Turmeric
Instructions
Egg White
- Bring to boil and pour into mold, let firm in the fridge
Egg Yolk
- Blender everything
- Scoop cavities on egg white and spoon yolk (shape a little into rounds) into cavities
