In this house sometimes avocados are so abundant and yet only me who are so crazy for them and can’t eat them fast enough, so sometimes they are too ripe and gone to bin, sadly.
When I am not too preoccupied and forget about them, before they are gone too ripe, I freeze them.
Yesterday I thought to turn one if not two, into cookies. After googling, there are just too many recipes my eyes got twisted to find the one that I know I have the ingredients. No such luck.
So I came up with these myself instead hahaha
They turned up good but not sweet enough according my 7yo! My 7 yo and husband is pretty crazy on these cookies
So up the maple syrup please!
1 1/2 tbsp ground flax mix with 5 tbsp water, set aside until slimey texture is achieved (like 10 mins at least)
1 cup ap flour
¼ tsp baking soda
A pinch of salf
1 large ripe avocado, mashed
1 tsp vanilla/almond/maple essence
3-6 tbsp maple syrup (I used 3 tbsp when I made mine as you know how sweet maple syrup is, plus peanut butter, didn’t think it wasn’t sweet enough, but again as I said my son said they aren’t sweet enough, so am guessing 6 tbsp next time would be sweet enough)
2 tbsp creamy peanut butter, warmed in micro til melted
1 c semi sweet chocolate chips (mine accidentally vegan)
Preheat oven to 350 degrees and grease or lined your baking sheet with parchment
Mix flax with wet ingredients
Mix dry ingredients
Combine both
Add in Choc chips
Shape a tbsp dough and flatten with either your palm or the bottom of a glass
Bake 11 or until the edges are firm.
Cool on rack
So good IMO (as I like my avocado without sugar usually!), but need more sweeter according to the littles!
Avocado Chocolate Chip Cookies
Ingredients
