One day when we went to Costco, I spotted PB2! Peanut butter powder. Haven’t use it before but saw how many vegans online use it on their cooking and baking, so I grabbed 3 jars ๐๐ I don’t know why, not greed, but Costco is like 3 H drive, man ๐๐
So I have been cooking and baking, trying to use them up ๐๐๐๐
Anyhoo, I tried using it for toppings on some of the following rolls and I drew a conclusion, had I used peanut butter, I might have a very wet gooey rolls, so using the PB2 was perfect ๐
1 kg multigrain flour for bread (can use regular white AP, pastry whichever. Am just using up my blend multigrain flour for bread)
21 g active dry yeast
625 ml lukewarm water or plant based milk
3 tbsp coconut palm sugar
1 tsp sugar
1 tsp salt
Using electric mixer, blend into dough
Let stand covered with plastic wrap for half hour until doubled in size
Roll flat
Melt 3-4 tbsp vegan margarine/butter and brush generously on dough
Sprinkle with cocoa powder and coconut palm sugar plus tons of vegan chocolate chips (or semisweet, check ingredients)
Roll and slice
Place rolls on baking sheet and let rise for another half hour
Bake for 20 mins on preheated 350
With PB2
I had like 2 tbsp melted vegan margarine left, I then mixed in 3 tbsp icing sugar with 2 tbsp PB2 and 1 tsp almond milk
Once rolls are baked, take out and brush with mixture immediately
Cool on rack
So, so, good!
