I am that boring vegan, I don’t make Pinterest worthy vegan meals, but easy yet filling and nutritious meal(s) – at least I’d like to think so 😀
Spicy bitter gourd
- 3 bitter gourd, thinly sliced
- Half of a large onion, thinly sliced
- 6 red bird eye chillies, sliced
- 3 garlic, thinly sliced
- 1-2 tbsp olive oil
- Vegeta powder to taste
- Magi liquid seasoning to taste
A couple of hours in advance, sprinkle sliced bitter gourd with generous of salt, rubbed all over and somewhat squeezing. Let stand for at least 2 H. Then rinse and drain
Heat oil saute onion garlic til soften
Stir in chilies and bitter gourd
Season
Cook until gourd tender and adjust seasoning
Stir fired long beans and mushrooms
- 1 box white button mushrooms, sliced
- 10 baby carrots, thinly sliced
- Half of a bunch of long beans (usually sold in a big bunch – at No Frills, use only half as it makes a lot), thinly sliced
- 4-5 garlic, crushed or sliced
- 1-2 tbsp olive oil
- 1 c of water
- Vegeta to taste
- Sesame oil, a drop or two
- 1 tbsp cornstarch dissolved in 1/4c water
Heat oil saute garlic
Stir in long beans and carrots
Add in water, lower to medium heat and cover pan
Cook until soften then add in mushrooms, season
Stir in cornstarch
Scrambled Tofu
- 1 box of extra firm Tofu, crumbled finely
- 1 box of white button mushrooms, chopped
- 1/2 of an onion, diced
- 3 garlic, thinly sliced
- 1-2 tbsp olive oil
- Vegeta to taste
- A pinch or two turmeric powder
- Black salt (kala namak) to taste
Heat oil saute onion and garlic
Stir in mushrooms , cook til soften
Add in crumbled Tofu
Season with vegeta, turmeric, and kala namak
